To me.. altho zucchini is a 'summer' squash, I love it prepared in THIS manner during the cold winter months.
I have a recipe Ive been using for years... I do alter it at times, adding choco. chips and nuts...

Tricks You Into Thinking Its Healthy

But alas, like carrot cake it can doom any diet.
But its sooo good! Who would've thought that such a yummy bread can exist from a vegetable?
I really should make it more then once a year (Christmas gifts), its a good thing to have...

When it is right out of the over, warm enough to melt any margarine on it, it is heavenly!
I love the spices that go with the zucchini so well! What a great treat!
