I was raised to refer to men/women that I am not familiar with as 'sir' or 'ma'am'.
I have worked in various service industries and was perfectly at ease using sir or ma'am.

It is a sign of respect.
If they don't know me then, Miss or Ms. is fine.
If they do, then they are expected to call me Dr.
It is a title that worked hard for and have earned.
