Our local Japanese restaurant do a lovely range of noddle dishes. My favorite is the beef noodles with pak choi. However, there is one dish that stands out from the others. Tofu and vegetable noodles, which we always order with a side of chili-peppercorn squid.
Am never fond of Rice.
But somehow, very very fond of Noodles!!

I use pad thai noodles (flat rice noodles). I boil them in a pot with chopped broccoli, low-sodium tamari, and nutritional yeast. The yeast gives them a sort of cheesy taste and texture. Not too much water, or the yeast will be diluted. It shouldn't be soupy; most of the water...
