    Such a Diverse Cuisine

    I grew up in Louisiana, back when Cajun food wasn't found in restaurants, but in homes and public schools.  Like so many poor folk around the world, the Cajuns learned to take most any ingredient and prepare it with love, turning it into something wonderful!
