raw fish. The fresher the better ;) a squeeze of lime and a little salt..or dip it in soy sauce/lime juice/Wahhabi, with sweet pickled ginger slice. There is nothing better then this most simple, yet delicate taste of the raw fish.
There's a sushi place in San Ramon, California (near San Francisco) called Sachi Suchi. I've been to many sushi restaurants across the country: Hawaii, Vegas, LA, SF, you name it... nothing compares to this place!!! The Salmon and White Tuna is simply amazing!!!
I am seriously addicted to sashimi. I love raw TUNA the most. I cannot get enough of it. I also love raw salmon (not raw smoked), and any other type of raw fish I will eat too. I didn't discover this "addiction" of mine until just a couple...

my favorate are specialty rolls and sashimi.
as far as rolls are concerned-
my alltime favorate has to be Spicy Tuna Roll
but my other must haves are Philadelphia Roll, Dynamite Salmon Roll, and occasionally a maki roll of some sort, or something new.
