    I made the BEST rice pudding the other day; don't know EXACT amounts but will give you a ballpark recipe.

    Steamed rice (I use Jasmine rice; most fragrant for rice pudding); steam and let cool down a little.
    In another pot add 4 eggs with a can of evaporated milk, vanilla, sugar and a smidgen of cinnamon or nutmeg and a pinch of sea salt. Cook as a custard until slightly thickened. Add to the rice. VOILA...the best rice pudding you have ever eaten...

    I don't have recipe, but can recommend an excellent pre-made brand called Kozy Shack. It can be found in the refrigerated section of the grocery store.

    Chef at work uses the internet when looking for food intolerance related sites - don't know them, sorry, but I'm sure you could google for recipes which are gluten free....either that - or its fresh fruit salad!!!
