    I have yet to try to make cheese. Camembert? Wow.

    Camambert is actually quite easy and only takes 3 weeks. Whereas cheddar takes 6 months - 2 years to ripen, depending on how sharp you want it. Mozarella is even easier and can be done in 3 days.

    About the most I've ever considered is ricotta or Paneer, depends on which country of origin.
