Although I'm not vegetarian, I like to chop, carrots, onion, mushrooms, cook that in a little water with some butter, salt and pepper, with some butterfly pasta, or other typres, if you prefer, I also cook some spinach pasta, because it's green and adds to the colour, plus some finely chopped tomatoes, with grated cheese on top. YUMMY!

I guess cauliflower cheese is a good one, or a baked potato with a nice filling
