I made a ridiculous amount of food, but thankfully that was the worst of my errors. I went with my gut on the turkey and just covered the whole thing with sea salt to dry in the fridge overnight (the simplest possible implementation of "dry brining") and was rewarded with the crispiest skin ever, fulfilling a goal set last year.
