No, we're not finished evolving. There will be far less of us if any at all. I imagine that the rich will be look as good as their money can afford them to look. The poor will simply be fitter or die younger.
No...if evolution is in anyway correct it must be ongoing. We won't be genetically much different in a thousand years .....but more gene that might have been dying out....will still be in circulation due to increased healthcare....if our society continues.

Absolutely not. ::Ok putting my nerd hat on::: Nothing stops evolving. However, a thousand years really isn't that much time unless you are a fruit fly. You would really need a million years or so unless the mass majority of people were wiped out. Obviously it is hard to say what we would look like but I am pretty sure that any evolution will be around digestion and what we are able or not able to eat.
Who knows if there will be any human beings in existence in a thousand years. I can't see that "Far".......;))
