No. They cooked the old way, with grease, eggs, butter, cream, cheese, beer, tons of meat, bread, and starches.
Also back then The average life expectancy was like 45. You didn't have much time to develop chronic problems. Plus they were certainly way more active.

Yes, because everything is processed now, with added sugars, oils, salt, preservatives and additives.

Not really. I'm sure the meat, butter, heavy cream and ale they served back then was more or less as fattening as the stuff we have now. People were generally thinner (but not as thin as you might think) because food was much more expensive relative to earnings and most people worked performing manual labor.
