I have been told that the eggs that don't sell by the used by date get sent back to the distributor from the wholesaler. They check the eggs and repack them. I'm trying to remember who told me this but they worked in the industry.

If I do that little egg test, and they "pass" then I might go a few days past expiration date. Mostly though, I use fresher eggs. They are fairly cheap, and I know that producers already change stamped dates now and then. And it isn't worth taking the chance that I or my son will get sick. I don't trust a "bad egg"
