You might go into a locally owned restaurant and offer to work for free for a day or two while they are training you. Gives them a chance to choose and gives you some experience.

I opened my own (two) restaurants, was Sous chef, bottlewasher, janitor, and bookeeper, serving was the EASY part.

I have never been a server but you may want to apply for a hostess/host position first and then train to be a server
