You only tap the egg on a hard surface until a crack appears then you use your hands to pull the shell apart allowing the contents to fall into a bowel.<br />
So don't break the egg when you tap it. <br />

That has literally never happened to me. It might be the type of eggs you buy, some have firmer yolks. Also, crack on a flat surface rather than an edge, I've heard that helps and it's a trick a lot of chefs use.
Yeah, try using a flat surface to lightly crack and then pull apart with your thumbs, best of luck :)

Tap it slightly, and break the shell with fingers from both hands with the cracked portion.
