Resolved Question

How do you know when it is done?

I have an old handwritten recipie of my grandmother's for wet-bottom shoofly pie. At the end of the recipie she just says bake at 350 until done. How do you test this for doneness? (She is dead so I can't ask her, well I could but what if she answered.)

When it stops smoking! No, it depends on how you like them and how 'sloppy they are' Just pull it,or one, to the edge insert a clean knife. If sticky : near done (unless you like it that way)
a tad sticky done
dry very done
burnig start over

Whatever was baking, Grama always stuck a wooden toothpick into the center. If it comes out clean, it's done. Never heard of this pie though.

It normally needs to cook about 45 minutes but you can also stick the toothpick or a knife in the center and if it comes out clean it is done. I remember my grandmother baking this for me when I was a kid. I had not tasted it again until I visited Amish Country and this was one of the items we had several times there. It is good. Share some with me when you are done.

LOL - I hope she doesn't answer!

I would start with a half hour and then check it from there. I've never baked a pie that didn't need at least a half an hour. Test it by sticking a knife in it and see if the consistency is right.

Sounds delish by the way! Please share!!

Oops. I always thought Shoo-fly Pie was supposed to be gooey. But I'm not from the South, so what do I know. If the crust is golden, it's probably done. (Wet-bottom???)

Bake for about 40 minutes or until liquid is set. Don't forget to remove from oven and place on racks to cool. Also it may only be 30 minutes for some recipes. Does your's call for preheating the oven? Anyway, just experiment with 30 minutes and then 40 to see if the liquid has been set. Each recipe varies and has it's own little secret.
