How do you make a really good, sweet short crust pastry that is crisp and light with that "short bread" taste?

I agree basically but here's my knack:
Knead the flour into some soft butter until it stays together. A little water or buttermilk can be added if it seems too dry. Sprinkle your powdered sugar (and cinnamon for me) into the mixture; knead some more. Throw it in the fridge for a couple oh hours. I don't know what that does but it comes out pretty good.

The basic recipe's butter, flour & powdered sugar... you can probably Google "shortbread recipe" and find a couple hundred.

If you're trying to make pie crust, pettty much same ingredients less the powdered sugar, and just enough COLD water to hold the dough together... and just enough handling to roll the dough out & flop it into your pan -- you don't wanna knead this dough, just enough to make it come together... good luck..!

I'd go to foodnetwork.com and search Paula Dean's recipes.....she's the QUEEN of southern cooks and if anyone has a perfect recipe such as you're looking for, it's her. If you're looking for a perfect pie crust, let me know, I have a great recipe. Best of luck!

"Cold" butter, don't handle dough with your palms just your cool fingertips, (cuisinart works to cut butter into dry ingredients easily & quickly) and a good mold like cast iron works for nice brown cookies. Or is this a pie crust? different ingredients, same rules.
