How do you make pastry?

First - go shoppin
Secpmd - buy flour, margarine, sugar, eggs, spices and spray PAM
Third - put some flour in a bowl - break two eggs into the flour - pour a little milk in - mix it up -(you might need some yeast at this point depending on the flour.)
Four - let the whole thing set for twenty minutes. Take whatever spices you like and the sugar (you will have to experiment) Blend them in to the mixture. Roll it out and let it set ten minutes twice. Roll it set it roll it set it. Bake at 3560 - you can put things inside the pastry (like jam or fruit or custard) at this point. I find that depending on the flour brand and other variables, the best way at this point is to keep checking.
When it is dome, pour yourself a cold glass of milk, and then pig out. I like to make apple turnovers this way. Ummmmmmmm good.

Best tip I could give : keep it cold. ( this keeps the fat in the mixture "solid", so that your pastry is flaky, and tender, not tough and chewy. ) If possible work on a stone slab, and use a marble rolling pin. ( Keep these refrigerated, or frozen. ) Also, handle the dough as little as possible. *Handling the dough effects the gluten in the flour mixture, which greatly affects the texture. ) Good luck!

***By the way, and leftover pastry? Sprinkle with sugar, and pumpkin pie spice - makes great cookies for children!
