Our version of vegetable soup is one of the easiest things in the world to make. What I do is use leftover vegetables from the fridge like corn, green beans, potatoes, lima beans, etc. And leftover roast beef and/ or hamburger meat(you can buy stewmeat at the store). A large can of tomatoes and throw it all in a pot and let it cook for a while. Depending on how the leftovers were spiced to begin with, you may add a little season salt/salt, pepper and oregano to taste but that's basically it. My grand mother used to even put noodles in hers and I've heard of people putting rice as well.
