Poaching an egg is easy if you follow the instructions. You need a skimmer or a slotted spoon, at least a quart pot of boiling water, add a few shakes of salt to increase the bouyancy slightly. When the water is boiling, but not a massive rolling boil, give the water a quick stir so its swirling. Crack the egg into the boiling water, make sure it's not too far from the water. You don't want it to splash at you, or the egg will break if it hits the water too hard. Four minutes the egg will be almost medium, with the yolk still runny. Up or down from there, however you like it cooked. Hard poached takes almost 10 minutes, sometimes more. Scoop the egg out with the slotted spoon or skimmer.
