How long until eggs that are kept in the fridge (untouched) go bad?

I made some omelets yesterday without thinking how long they've been in the fridge for...... My guess is they're a few months old..? :S

Oh gosh I just did the water test and the egg basically flew to the top. I had three of those eggs today.. I should probably watch for any bad health symptoms LOL.

Always check the expiration date on the carton. If the eggs have been removed from the carton, and stored in the fridge, do the water test:

In a clear glass bowl, place the uncracked egg on the bottom of the bowl. Fill the glass with water then step back and watch the egg. Fresh eggs will stay on the bottom. If the egg floats to the top of the water you know it is bad and should not be consumed.

Eating spoiled food can give you food poisoning from Salmonella. When in doubt, throw it out!

About a month, if it smells when you crack it open do not use it.

I always keep my eggs in the dated carton and keep my eye on the date - with the fridge at around 4degrees C. The water test is good as well - if it floats, smell it when cracked but before it goes in the bowl.

FWIW, you might want to use two bowls. Crack each egg by itself into Bowl A for the "sniff test", and if it passes, transfer it to Bowl B. That way you don't waste eggs if you happen to crack in one that smells "off".

I've never used the "floating test" before, I just sniff each egg. Because once you have immersed the egg in water, even clean tap water, it's no longer safe to re-refrigerate it and you will have to use it right away.

One additional test which we use here in Singapore is to prod the yolk gently with a clean finger. Or if you dare, even pinch it gently. If the egg is still reasonably fresh, the membranes will be supple, and it should not break. I've picked up very fresh yolks before without breaking them; just try. A yolk which breaks too easily is probably too stale to eat.

Here's the way to find out if it is a good egg or bad egg. Put it on the floor, spin it around and around, then stomp on it. If it breaks with a popping sound it was bad. If not, well then, it was good. Do this to each egg and you will be able to tell whether it was good or bad.
