figure it by how many if you were on the receiving end,

The short answer is, it's too many when it's not fun for you anymore.
See as many as you can afford and fit into your schedule and sleep with all of them. You need to sleep with all of them as a way of auditioning them for a permanent role in your life. Push the sexual envelope with each of them to assess how well they each align with your own predilections. If one or more of them enjoys the same fantasies, fetishes, tastes, etc. as you, put them at the top of the list and reward them with more time on your schedule. The ones who do not align, phase them out and replace them with new talent unless they have other qualities that you value a lot.
Should they know about each other? Peronally, when I was dating, I was always made sure we were all on the same page and that we understood whether or not the relationship was exclusive. Beyond that it doesn't make sense to provide each of your partners names, details etc, of the others. That never plays out well. Most people become jealous when they know too much about their competition.
I would say also, stop sleeping with the others when you come to an agreement with one of them that the two of you wlll be exclusive.
