    Chop a handful of parsley, a tablespoon of capers and a bunch of white onions. Dust the filet with flour. Put a frying pan on the burner until it's hot, then melt 2 or 3 tablespoon of butter: quickly fry the fish until the outside is golden brown, season with salt and pepper and put in a plate and keep warm with foil. Raise the heat again and deglaze the pan with a cup of dry white wine, boil until reduced by half. At the last moment, throw in the parsley mixture and mix it in: cover the sole with the vegetables and enjoy.
