It's really none of your business what they believe and it is rather presumptive to ask. People do this sort of thing all the time. But it is rude. If you are not talking about a related subject..why would you think that it's ok to put them on the spot with such a question?

Because you "hit" their conscience. A lot of people don't want to believe in anyone or anything higher than themselves. People know God exists, but if they admit it then they are accountable for their actions. thus they simply "gloss" overt Him ("Don't talk to me about Jesus" or "there is no such thing as God", or "I don't believe in religion") so as to ease their guilty conscience.
