I have been given several dozen eggs. How should I cook them to use them up before they go off?

You can freeze raw eggs. Crack the eggs and stir it up a bit. Put a few in a baggie and label it as to how many ..2 eggs or 4 , what ever. They thaw in the fridge very fast. You could make egg salad, scrambled eggs, potato salad, a breakfast casserole that takes many eggs.

Make several different quiches and freeze them for later use.

Make a quiche and freeze it, hardboiled eggs, omellette, make some nice buns or cakes, pancakes, the list is endless.

Boil them. Keep some in the fridge for a quick small snack. Put some in some chicken 'n dumplings. Make egg salad. Deviled eggs. Chicken salad. Lots you can do with boiled eggs.

Lorraine, i can't give you advice that is near as good as what you've already got, but i have a few unusual ideas. when i lived in Baton Rouge, Louisiana, people used to put whole boiled eggs in their spaghetti sauce, the marina kind. they also put fried eggs on their hamburgers, and ham and egg sandwiches. one lady put whole boiled eggs in her soups, like chicken noodle and bean soups and gumbo. scrambled eggs with bean sprouts and soy sauce. those are just a few unusual ideas.

you can add about 8 eggs and a can of evap milk to a glass dish and make a custard. It will also keep in the fridge for several days.

Fresh eggs will keep several weeks. How old are your eggs? Are they from a store or straight out of the chickies too too?

An embryo will stay alive in a fresh chicken egg at 70 degrees for about a week. If you put them in a fridge immediately from the chickey too too, they will keep fresh about a month or even longer. They will smell if they go bad.

I am an egg snob.. I trash them after that.

You've got a lot of good answers here. I would boil some then use them as additions to salads as well as many of the suggestions above. I know people who eat omlettes any time during the day depending on what else they put in them. Also have you ever heard of egg drop soup, or egg fu yong (forgive the spelling)? Just a few more to add to your list.
