You crush them, heat them up until they become juicy, then put them through a sieve or food mill to remove any seeds. Measure the strained pulp and add one cup of sugar to one cup of strained berries. Heat it to barely boiling, take it off the fire, and put it in mason jars, put the seals on the jars and process them in a canner (steam canner or boiling water bath canner). If you don't have a canner, you can sterilize the jars and lids, then put the boiling syrup in the jars and seal.

I would just put the whole huckleberries in a pan, heat them on low heat and ad sugar if you desire. Keep it simple and the berries dont have noticeable seeds so you dont thave to strain them. this makes a great topping for ice cream, cheesecake, salmon, etc. You can get the fresh huckleberries online at www.nwwildfoods.com. We also have frozen huckleberries year around.

Try putting them on top and let sit for several minutes.

Blender, sugar and a pot. Smash those berries, heat them stirring in sugar and water until slow boil. Strain the mix through a cheesecloth to get any seeds out, and chill

Huckleberries are similar in taste and texture to blueberries. Any recipe that uses blueberries, or any topping recipe for blueberries would work very well if you substitute huckleberries.
