I always wanted to go to the IADT (International Academy of Design & Technology) in Tampa, FL but im not sure it will be a good occupation for me in today's economy. Should I go for a higher demand such as the health industry or go for my passion which would be music and technology?

Speaking as someone who's just leaving a tech school (for other reasons), you have to consider a few things;
1. Is funding beyond federal aid going to be excessively difficult to obtain in this economy? My former financial adviser told me many students in the past year came up getting turned down for their student loans. This has been seen as lightening up in the past few months, but do speak to someone in the know about this before signing anything.
2. Technology isn't going away, but people in the future may be less willing to pay for repairs when a replacement might be just as expensive. Sure, there's still a market for the skill, but the frequency of work might not be what you'd expect. As an Audio Technician, you'll have transferable skills to trouble-shoot things other than audio circuits, which may help if a slump hits that sector.
3. The health sector has been advertised as a growth sector for years to prep for the retiring baby-boomers. You'll join many who are taking this route for that reason if you go down this path.
Being an AT is more lucrative, and has less competition than the health sector will in 4 years, but it is also more technically challenging - more logic-oriented. In the end it's up to you, but I would suggest following your passion.
