I prefer not to even use the term soul because it has never been said exactly what it even is.

There seems to be two questions here:

Question 1: Is the soul simply the untapped part of our mind?
This would depend on who you ask. I would tend to say no, that soul by definition has nothing to do with mind. Personally, I don't believe in the concept of a soul. I do believe that the untapped portion of the human mind is a strange and beautiful thing; however I do not believe that it is the soul.

Question 2: Is the soul a separate entity to the mind?
Again, the answer to this depends on who you ask. For the most part, belief in the soul is spiritual. The soul is something which continues on after death, whild the mind doesn't. The soul, in many spiritual belief systems, is also linked strongly to the souls of others, the soul of God and the "soul" of the universe. The mind can't be linked in the same way.

This is only a very brief exploration of the issue, but I hope it helped.

Leaving the theology out of the equation, I like the simile of a battery. It contains electricity, but you can't weigh it or observe it directly. You just see the globe light up to prove its there. The "soul" it the output of a living battery; us. Once the battery is discharged, thats it. No more soul. Just a dead battery.

To me, the Soul of a human being is a being in its own right, who has chosen to be associated with the human because some of its 'lessons" for evolving are similar to those of the human it is "ensouling" - so both can benefit from the association; and the soul becomes the memory-store for the human once the physical body (and its memories) die.
