You're right. Anorexia is alot more complex than that. The whole food and weight related stuff forms in the latter stages of the illness.
Skipping meals to lose weight is extremely common, and is often a seperate topic. It's dangerous to jump to such quick conclusions.

Anorexia actually starts with many other behaviours long before the pre-occupation with food and weight, those are just symptoms of Anorexia. It's a wide ranging mental illness.
yes, trust me i know.. i spend some time at an eating disorders clinic surrounded by young women with anorexia and bulimia.. these are certainly complex mental illnesses. but anorexia generally starts as a diet, through skipping meals, cutting calories, limiting so-called bad foods, working towards a "goal weight" which, when achieved, is replaced by a lower goal weight and so on.. it takes over one's life gradually..
