My omelettes always become scrambled egg. What am I doing wrong? !?

After pouring the eggs in the pan let them set a few seconds. as the sides of the egg ferm try pulling them away from the pan with a spatula. tilting the pan so new runny egg pours to the hot pan, keep doing this until all runny egg is gone or close to it, add ingredience ( do not flip over) make sure omlet is not sticking to pan and slowly tilt pan over plate and let roll or fold out onto it. use spatula to help along. The heat from the folded omlet will cook the inner part so don't worry about runny eggs in the middle.. Which I hate, but then who doesn't.
Orrr , you can do as above but instead of rolling omlet use flipper to flip one side of it and slide out of pan onto plate.

You are probably not letting the egg mixture set properly.
Once you pour it onto the pan, lower the heat and let it set without touching it.

Put the egg mixture in a pan and do not touch it, then finish off under the grill. Bob's your uncle, one full omellette coming up.

wish i could show you - it would take forever to describe preparing a proper french omelette in text - basically you need to start w/ a real hot pan - just short of butter burning temp - have your fillings ready beforehand - pour your eggies in the pan and you pull the cooked egg towars the center of the pan while tilting the pan to let the un-cooked egg fil in the spots - do that all over till all the egg is cooked - put your fillings on HALF the omelette - then let the omellette slide out on the plate folding it over the fillings with the PAN as you plate it -- need a good non-stick pan, well greased w/ cheap butter - UMMMMM i love making and eating omelettes - try gravelox, goat cheese, and bacon - UMMMMMM

don't stir the egg once it is in the pan. let the bottom begin to solidify and then with a spatula, turn the whole thing over.

Cover the bottom of the pan w/ the eggs and let it settle. Add ingredients and flip. One side needs a crust, stop stirring so much.

Don't touch it till at least a minute passes-pull the middle to the side and fill with your filling of chioce or just fold
