Well if you really want to get creative, I was watching cooking network last night and they were taking some usually boring dishes and making them interesting and tasty. One of them took a pot pie and made it into this beautiful flaky strudel looking thing with fresh vegetables meat and a little drizzle of gravy. I hate pop pie, but that looked good. :P

do you have kids even if you don't I make meatloaf cupcakes I call them
Instead of making like a big brick of meat loaf I put the hamburger mixture into my muffin tray that way it gives you 12 little meatloafs instead of a huge brick and the kids will eat them because its something handheld and reminds them of dessert.
