I had dandelion coffee a few times, and it was yummy. Good to know that we can eat the leaves too.

You can make salad from them, cook them, make wine. Plus I think they were originally introduced to the US as a decorative flower and only later became considered a weed because of the US obsession with lawns. And groundhogs love them as a delicacy.

Yes, they have a bitter taste. Probably why most people don't eat them. The taste just doesn't excite most people.
