Today I heard someone say that Political Correctness was a way of saying "Don't Talk About It." Any thoughts on that?

I think that "political Correctness" is yet another term devised by conservatives for something they don't want to deal with. I think the better term is courtesy. It has been taken to extremes, like everything else, but at core I think it's the doctrine of being careful about whom you offend.

The term "politically correct" originated among leftists in the early to mid 1980s. It was meant as a mocking or teasing term directed at those that were excessively doctrinaire or puritanical, yet was also measurement of adherence to leftist moral standards.Like (1)

It's more of a way to placate overly sensitive activists who have nothing better to do than whine about discrimination when a phrase allegedly remotely resembles something they themselves consider racist. Interestingly, the same individuals act only when dealing with their own race/ethnicity etc, and ignore in most cases the, again alleged, "offensive" terms used against ethnicities other than their own.

Political correctness seeks to minimize conflict so it goes beyond merely refraining from discussing things. In the old days people would say things like, "That's an indelicate way to put it". That doesn't mean people can't talk about it as indelicately as they please, but political correctness offers alternative ways to discuss issues that are less emotionally charged.
For example, referring to Obama as "The Kenyan" is politically incorrect and does not promote constructive discussion. You can insist if you want that everyone be free to use whatever derogatory terms they prefer, but a lot of employers for example insist on more political correctness in the workplace. Likewise some individuals might insist on political correctness if they are to discuss issues with you and that is every bit as much their right as it is for people to insist they have the freedom to say what they please.Like (3)

Being politically correct describes a way of communicating, quite the opposite of silence.

Political correctness is for people who feel guilty about what they really think, and edit themselves to hide from others.
