the same thing that differentiates between all liquors. What is being fermented. Tequila is made from cactus, preferably the Agave cactus. other liquors are made from fermenting the sugars in wheat, rye, barley, corn, potatoes, rice and so on. That's the basics.

Tequila is completely different to whisky. Whisky is Scotch.

What it is made from. Tequila is cactus juice, whiskey is made from corn or rye, usually. And scotch is made from Scots. I honestly don't know what scotch is made of.
