I have so many favorites ... Rocquefort, Stilton, Morbier, Gruyere, Emmentaler, Toscano, Havarti, etc.<br />
My favorite of favorites are the Dutch cheeses, I adore are dark orangy aged Gouda that is full of butterscotch and caramel notes. There is also something you can't get in North America: Friese Nagelkass (or "Nail" cheese from Friesland - it is pierced with cloves).
Extra Sharp Cheddar.
Any really strong mature cheddar.
I am a bit of a cheese-head. I love cheese, especially well aged, savory cheeses. I am not found of sweet or mild cheeses for the most part, although Mascarpone is great in deserts. Sharp and Extra sharp cheeses are great. Blue cheeses are wonderful. I also like smoked cheeses and many wine-infused and herbed cheeses.
