My home recipe for "flapjacks."
6oz. Brown sugar.
8oz. Rolled oats.
Pinch of salt.
Sultanas or raisins. !
There they are - my world famous flapjacks
Melt the butter in a saucepan, mix in sugar, oats, and salt. Mix well, add fruit. Turn mixture into a well greased Swiss roll tin, smooth the surface, and bake for 25 min or so, on a moderate oven. When cooked, golden brown, leave to stand in the tin for a few minutes, then cut into slices. Leave in the tin, untill compleatly cold, before removing
For a slightly stickier flapjack, use 3oz of brown sugar, and 3oz of golden syrup, instead of all sugar.

My Grandmothers Honey Milk. It's something she used to make me when I was sad or hurt or couldn't sleep. I found it to be a great comfort.
-1 cup milk
-3 or 4 tbs of fresh honey
-1/2 pinch of mint
-3/4 tsp of cinnamon.
Pasta, cheese and tuna mmmmmm
Bourbon Balls (powdered sugar, butter, pecans, bourbon, chocolate for dipping)
Gin, tonic, ice, and lime
A pound of short pasta (penne)
Any in-season vegetable, diced (asparagus, bell pepper, broccoli, fennel, whatever)
An ounce of fatty cured pork, minced (pancetta, bacon, lardo, etc..)
Good parmesan cheese (parmigiano-reggiano)
Put a huge pot of salt water on to boil. Put a skillet on medium-low heat and add the olive oil and minced pork. Cook the pork until crispy. Add your pasta to the water and stir for a bit unill the water statrs boiling again. Add your vegetable to the pan. Season. Cook for a few minutes, taste, and then adjust seasoning.
Your pasta should be ready in around seven minutes. You want it a little underdone. Shortly before its done add a ladle-full of the pasta water to the pan. Finally, add the pasta to the vegetables and cook until the pasta is al dente. Taste and add final seasoning. Plate, and then cover in parmesan.
