There's a little island halfway between the Australian mainland and Tasmania, just a little windswept dot of land called King island, and on King island they make the best brie and camembert, you will ever taste, I used to go along to training sessions for the company i worked for just because they supplied King Island double brie

string cheese. Mozzarella string cheese. It's fun to see how small i can make it as a tear it apart and eat each piece slowly. it's great. makes me feel like a kid again.

Feta and cheddar (sharp). Both have a nice tang to the taste...
Smoked Gouda. Best with a good cut of beef jerky and a glass of sweet tea. No crackers needed. ~sigh~
i love cheese period so its hard to choose. but it would be a toss up between provolone and colby jack.
I like Swiss, but Cabot cheese doesn't make it.
