When are raisins considered "fresh"...?

I have this very thick book with all foods there are in it, chemically described one by one. Guess what: it doesn't say!
But according to the book raisins have a moisture content of 15,7 g /100 grams. That's pretty dry, so unless they are exposed to moist air, very dry air or water, they wouldn't change over time. That means they stay "fresh" for ever.
But it also depends on how well they are produced, making raisins can be tricky.

umm when they are not hard as rocks and don't have mold growing on them...

The closer thay are to the day they were picked,..then the fresher they are...They can however ,.if stored correctly,...last a very long time...If you really want them to be 'younger',..then you can plump them up with any refreshing liquid,..such as rum,.water etc...Thanks for raisin the issue:)

By raisins i presume you mean clagnuts , well i would say they are fresh when they have a shine to them are soft to the touch and there is no way of dislodging them from their hairy perch . They are considered old when dull , turn easily to dust and can be picked off with the soft part of the finger tips . The best tim eto harvest them is during that "inbetween" stage . What a very strange question.

Raisins are just sun-dried grapes so I guess they are at their freshest when they've just been dried.

You don't pick raisins off a tree lol! ;0)))
