Glaze it with honey?
maple syrup mixed with dijon mustard makes a great glaze for chicken or pork :) If you like a tad bit of spice, you can use horseradish mustard instead.
Mix honey with hot ENGLISH mustard and a little salt and pepper, then brush it onto the skin side of the chicken and bake covered in foil or in a roasting dish with a lid on gas mark 4/5 for 45 minutes. Uncover and turn the heat up a little bit for the last 20 minutes to make the glaze crispy :) keep checking cause times aren't exact.<br />
a little malt vinegar in the bottom of the dish helps to stop it being too sweet and don't be shy with the mustard.<br />
