Take a course on indian cookery. You'll not regret it. I took a six week course and was surprised how simple most of their techniques are. Very adaptable too.
Yes seriously. Every indian dish I learned to cook uses very simple methods. Pilau Rice, Bombay Potatoes, nann bread, parathas (stuffed or otherwise), keema, any of the curries. They're all very easy to prepare in your own home. Get on a course, you'll never look back.
