Because Christianity was a colonial religion. Imposed / taught to people colonized by Rome, England the Dutch, the Spanish etc. Therefore the peoples are not of one race. The same is true for Judaism, that the people are not of one race. However, it isn't a colonial religion, and it therefore is more strongly associated with a smaller location throughout history, and more easily associated with a 'race' of peoples.
