You can eat roadkill too, but selling it is illegal most places because you've got no idea what the thing has been eating. Modern turkeys were bred so extensively for food the males' breast are too big to mate and they have to be artificially inseminated. Their diets are so bad they taste as bland as white bread, while a wild one is extremely tasty. Ducks are so expensive because breading them for mass production would be counter productive and raising them is just more expensive.

could be that the producers can't pen them up like chickens. that would make them more expensive to raise....and i don't think you're allowed to sell game

The demand is not high enough to want farmers to supply. In China where they have mastered the cooking techniques, it is relatively cheaper. If we EAT MORE DUCK, I could save money.

Simple supply and demand. Many more people eat chicken, so it's cheaper. Duck is good, and no harder to cook than any other meat, really. It's just not as commonly served. Chickens yield more meat per pound of chicken feed. It's just economics.
