Depends on my mood, but "Epitaph on an Army of Mercenaries" by A. E. Housman, "To The Moon" by Percy Bysshe Shelley (there are several, he was in the habit of writing odes to the frickin' moon, but the one that starts "Art thou pale for weariness"), and "Fern Hill" by Dylan Thomas are ones I keep coming back to.
