A decent scientist would say that there is absolutely no credible evidence to form a belief in any of the 1000's of gods people have believed in over the ages. They wouldn't claim they don't exist as there's also no evidence to prove that but then it's impossible to prove something doesn't exist if it doesn't actually exist.

Of course they would. That is, they'd acknowledge there's a mystery, but they'd also confess they or anyone else have not got a clue about the truth of things. This is why they use the word God to explain the unexplainable.
