Peter"s $1000 Cheddar Broccoli Pasta Bake!
Hi All .............
after entering in a macaroni and cheese contest and winning top prize i thought i would share this recipe with you all!
1 - 16 oz box elbow macaroni ( i use barilla or ronzoni)
1 cup low fat milk
1 can cream of chicken soup
1 tsp creamy mayonaise blend ( like dijionaise)
1 tsp olive oil
1 small onion chopped 1 cup shredded yellow cheddar cheese
1 10oz b
ox chopped frozen broccolli (blanched and drained)
1/2 cup white cheddar cheese
Preheat oven to 350 degrees
cook and drain elbow macaroni according to pkg.
spray a 2 qt. casserolepan with non stick cooking spray
In a medium bowl combine milk , soup and creamy mayonaise blend. set aside , heat olive oil in a medium saucepan , over medium heat, add onion , cook and stir for three minutes add the milk mixture and bring to a boil , stirring constantly . boil 1 minute Remove from heat stir in the yellow cheddar cheese until smooth . blend in the drained broccoli and cooked pasta . pour mixture into prepared casserole dish . top with the white cheddar cheese. bake in oven for 20 minutes until the cheese is bubbly. And ENJOY ! Yummy!
