Peter"s $1000 Cheddar Broccoli Pasta Bake!

Hi All .............
after entering in a macaroni and cheese contest and winning top prize i thought i would share this recipe with you all!

1 - 16 oz box elbow macaroni ( i use barilla or ronzoni)
1 cup low fat milk
1 can cream of chicken soup
1 tsp creamy mayonaise blend ( like dijionaise)
1 tsp olive oil
1 small onion chopped 1 cup shredded yellow cheddar cheese
1 10oz b
ox chopped frozen broccolli (blanched and drained)




 1/2 cup white cheddar cheese


Preheat oven to 350 degrees
cook and drain elbow macaroni according to pkg.
spray a 2 qt. casserolepan with non stick cooking spray

In a medium bowl combine milk , soup and creamy mayonaise blend.  set aside , heat olive oil in a medium saucepan , over medium heat, add onion , cook and stir for three minutes add the milk mixture and bring to a boil , stirring constantly . boil 1 minute Remove from heat stir in the yellow cheddar cheese until smooth . blend in the drained broccoli and cooked pasta . pour mixture into prepared casserole dish . top with the white cheddar cheese. bake in oven for 20 minutes until the cheese is bubbly.                        And ENJOY !  Yummy!

I made sorta your recipe yesterday but added 4 eggs to half a litre milk and grated nutmeg and Maggi boullion instead of the dijonaise and chicken soup. I also added diced pork sausage, because my three men are carnivores.

My son loves Mac & Cheese. I've never made it from scratch, and never thought about putting onions in it. I do add extra cheese and sometimes pour it into a baking pan, add fresh bread crumbs on top, dot with butter, and bake until browned. <br />

This sounds so good, my kids will love it...though I might spice mine up a bit, add some cayenne or use pepper jack cheese, thanks for sharing!

But my husband does the cooking..he's a bit particular. Sounds good to me though!

I learned a nice potatoe bake from a dietary adviser. <br />
It's with boiled, sliced potatos, spinach cooked with chopped onions, garlic, grated nutmeg, diced sheep's cheese, milk and cream cheese.<br />

Most of the recipes I search for, I find on chefkoch.de. Sadly it's only in German.

You know what? Yesterday I searched for a pasta bake recipe, but did it free style after I hadn't found what I searched for.<br />
<br />
My pasta bake was made from short macaroni, peas, smoked bacon, gouda cheese, scallions, cream cheese, milk, eggs.<br />
<br />
I will try yours soon and thanks for sharing!
