 Well Girls I've been cooking again...Well I shouldn't say again. I cook everyday... Here is my lastest creation. One you health nuts will appreciate. I love a handful of this or two for breakfast or an afternoon pick me up.


Vanilla Spiced Granola


4 cups rolled oats

1 cup brown sugar

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/3 cup canola oil

1/4 cup maple syrup...the real stuff...not mrs.butterworth

2 T granulated sugar...the white stuff

1 Tablespoon real vanilla extract...not immatation


Preat heat oven to 300 degrees. In a large bowl mix first 5 ingredients. IN a saucepan combine oil, white sugar,and syrup to a simmer. Remove from heat add vanilla. Mix with dry ingredients thourally. Spread onto cookie sheets, bake, stirring occasionly until golden brown. Cool completly before storing in an air tight continer.

Makes 8 cups.

I had some for afternoon snack with some milk heated up in the microwave...Fantastic....very filling....
