This is probably the best presentation I've seen so far of the scams mentioned in the title. You have been misled about what constitutes a healthy diet and what causes heart disease so that Midwestern agribusiness's profits can be maintained and so that the profits of the drug industry in selling statin drugs can be maintained. The false science peddled over the last half century by the US government, the medical journals, and the associations like the heart and diabetes associations has been an enormous tragedy. It has sent millions, including my own parents, to earlier graves than should have been the case.
You might keep the revelations in this video in mind anytime you hear that it is "Neanderthal" to dissent on anything from the "consensus" scientific views of the moment.

About the whole business of eating all the meat you want, I think that is a great idea for weight loss. For long term I have questions concerning the acid/alkaline balance of the blood, the PH. My own saliva and urine PH testing shows something a bit paler than the lowest shade on the strips, 5.0. That is not a good PH. So I guess I am going to have to try to eat more vegetables. It is frustrating because there are many more acid- than alkaline-forming foods, and many of the best foods, such as blueberries, are acid rather than alkaline.
