Unfortunately Jewish women of this time period were not able to have professions. If you are looking for authenticity, you could make her a midwife. Her education would have been unusual, too, as most of society scorned educating women. Or, you could create her as the daughter of a wealthy man with no sons who felt obligated to educate his daughter so that she could possibly take over his business in his old age. It would have been highly unusual for that time. For Jewish facts you might want to look up the Jewish history by Rabbi Berel Wein. There were many great Jewish women who were actual heroines that you may want to base your main character on. Very few Jewish women I know even today could fit the kind of prototype you want to portray-powerful Jewish women are like Queen Esther or Deborah the Prophetess-reactive to being attacked-not revengeful.
