It literally seems like I can't talk to a person of the opposite sex for more than two minutes without looking away or awkwardly fidgeting. I give up. I'm forever a rock. If you need me, I'll be laying on the floor with my hands over my face.

That's exactly how it is with me. I recently enrolled in a new school and they paired me up with this girl to show me around. She was so pretty, she liked a lot of the same stuff as me. She had the nicest face, ever. It intimidated the hell out of me. She hung out with me a lot during the first two days but then she kind of drifted away from me because, I'm just like you, I fidget a lot, make really bad conversation, and mix up my words. All because I was so damn nervous. Needless to say we don't really talk anymore. It kind of depressed me, since I really liked her. But it's no big deal really. I guess my advice to you would be to keep trying... eventually you'll find someone who'll really want to get to know you and you'll get past all that. I have, a few times before. don't give up 👍
