I Sometimes Wish I Didn't

That way I could lose more weight, but that is another topic entirely. 

I love to cook.  I love going through all of my cookbooks or searching on line for a new recipe.  I have started cooking a  lot of vegetarian meals lately.  My husband got his blood results back and he has high cholesterol, so fried food is just about out. 

I love to make everything from appetizers to desserts.  For my mom's birthday I made homemade raspberry truffles that were absolutely fabulous!  My most recent treasure I made was some pasta.

I used penne pasta cooked until al dente.  In a pan I put 2 cans of Italian diced tomatoes, and a can of white beans.  I let that simmer for about 10 minutes.  Then, I throw a bowl full of chopped spinach into the tomato mixture and stir until the leafs are wilted.  Toss everything together and top with crumbled feta cheese.  This is so good, not so good for left overs though.

If it sounds good to me I will give it a try.
