Oh my gosh. That sounds terrific! I just got done making some pesto. I grew, and am still growing my own basil, and love to make some for friends and family and of course, me as well :)

I was experiencing with cooking healthy Italian food. And this meal is delicious. Fiber spaghetti with oven cooked aubergine. Give me your pesto recipe. :)

Sure! Here's the pesto recipe:

2 Cups loosely packed fresh basil leaves (rinsed)
2 Medium cloves fresh garlic or one large clove -- peeled and coarsely chopped
2 Tablespoons walnut halves or pieces (you can also use pine nuts) chopped
1/2 cup extra virgin olive oil
1/2 cup parmesan and romano cheese finely grated and mixed together

Put all ingredients in a blender, and blend on medium high for 10 or 15 seconds.

Then add parmesan and romano cheese mix while blender is still running, and blend for another 30 seconds or so. You may want to increase blender speed if the pesto isn't smooth enough.

Pretty easy. If four cups basil leaves, then double the rest of the ingredients, and so on.

If making a lot, freeze some in glass jars to enjoy throughout the year.
